Summer is here and that means I am always trying to find ways to keep the BBQ going and the oven off. I love to be outdoors while it is sunny and if I can pull dinner off while getting some much needed vitamin D, I will!
If I am honest, I don’t own a BBQ but my best friend lives right next door and she has a beautiful backyard that I can sneak into and enjoy. That being said, if you don’t have access to a grill, that doesn’t mean that you have to go without this amazing recipe; it just means you’ll have to bake the chicken instead.
I created this simple recipe the other night at a dinner we hosted and it was a hit!
Sumac Marinade for Chicken Drumsticks
I think the highlight of this recipe is sumac. Ground sumac is a versatile spice with a tangy lemony flavor, although more balanced and less tart than lemon juice. Nutritionally speaking, sumac is a powerful antioxidant, high in vitamin C and helps to lower blood sugar as well.
If you are looking for a quick way to spice things up in the kitchen, give these tasty marinated chicken drumsticks a try.
Ingredients
– 1/2 cup olive oil
– 1/4 apple cider vinegar
– 1/4 cup Dijon mustard
– 1/2 tbsp sumac
– 2 cloves garlic
– 1/2 tsp salt
– 1 tbsp Herb de Provence
– 1-2 tbsp Coconut sugar (optional)
– 3-5 lbs chicken drumsticks or thighs
Directions
Pour all ingredients into a large bowl or ziploc bag and mix together.
Drop in chicken and mix again.
Let the meat marinate for at least 1.5 hours or overnight to really let the meat tenderize and absorb the flavours.
Cook on the BBQ until golden brown and the meat is good all the way through
*If cooking in the oven, cook at 400F for 35-40 minutes
